Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1 large egg
- 1/4 cup (60ml) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) pumpkin pie spice
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 16 oz (450g) full-fat cream cheese, room temperature
- 1/2 cup (100g) granulated sugar
- 1/3 cup (80ml) pumpkin puree
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) pumpkin pie spice
- 1/2 cup (60g) chopped pecans
- 1 pinch (1g) cinnamon sugar
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- Cream together the softened butter and brown sugar until the mixture is light and fluffy.
- Beat in the large egg, 1/4 cup pumpkin puree, and vanilla extract.
- Sift in the flour, pumpkin pie spice, baking soda, and salt, then gently fold in the dry ingredients until just combined.
- Press the cookie dough evenly into the bottom of the prepared pan.
- In a separate bowl, beat the room-temperature cream cheese and granulated sugar until completely smooth.
- Mix in the 1/3 cup pumpkin puree, vanilla extract, and pumpkin pie spice.
- Add eggs one at a time, mixing on low speed just until incorporated to avoid over-beating.
- Pour the cheesecake mixture over the cookie base and smooth the top with an offset spatula.
- Sprinkle the top with chopped pecans and a pinch of cinnamon sugar.
- Bake for 35–40 minutes until the edges are set but the center still has a slight jiggle.
- Allow the bars to cool and then chill in the refrigerator for 4 hours before slicing.
