Ingredients:
- 1.5 cups (180g) gingersnap cookie crumbs
- 0.25 cup (55g) unsalted butter, melted
- 2 tbsp (25g) brown sugar, packed
- 0.25 tsp (1.5g) salt
- 24 oz (680g) full-fat cream cheese, softened to room temperature
- 1 cup (200g) granulated sugar
- 15 oz (425g) pumpkin puree
- 3 large (150g) eggs, room temperature
- 0.5 cup (120g) sour cream, room temperature
- 2 tsp (10ml) vanilla extract
- 2 tsp (10g) ground cinnamon
- 1 tsp (5g) ground ginger
- 0.5 tsp (2.5g) ground cloves
- 0.25 tsp (1.5g) ground nutmeg
- 0.5 tsp (3g) salt
Instructions:
- Preheat your oven to 325°F (160°C).
- Combine gingersnap crumbs, melted butter, brown sugar, and salt in a medium bowl.
- Press the mixture firmly into the bottom and 1-inch up the sides of a 9-inch springform pan.
- Bake the crust for 8-10 minutes until fragrant. Remove from oven and allow to cool completely.
- In a large bowl, beat the softened cream cheese and granulated sugar on medium-low speed until completely smooth and devoid of lumps.
- Stir in the pumpkin puree, cinnamon, ginger, cloves, nutmeg, and salt until the color is a uniform deep orange.
- Add eggs one at a time, mixing on the lowest speed just until blended; do not overmix to avoid incorporating air.
- Fold in the sour cream and vanilla extract with a spatula until the batter is glossy.
- Pour the filling over the cooled crust and smooth the top with an offset spatula.
- Bake for 55-65 minutes until the edges are set and slightly puffed, but the center remains slightly jiggly.
- Allow the cheesecake to cool inside the oven with the door cracked, then transfer to the refrigerator and chill for at least 6 hours before serving.
- Top with caramel sauce and whipped heavy cream before slicing.
