Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup (240ml) milk, any kind (whole milk recommended for richer flavour)
- ½ cup (120ml) vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup (85g) chocolate chips (milk, dark, or semi-sweet)
- 1 cup (120g) fresh or frozen blueberries
- ½ cup (50g) chopped nuts (walnuts, pecans, almonds)
- ½ teaspoon ground cinnamon
Instructions:
- Preheat oven to 400°F (200°C, Gas Mark 6). Line a muffin tin with paper liners or grease well.
- In the large mixing bowl, whisk together flour, sugar, baking powder, and salt until evenly combined.
- Make a well in the center of the dry ingredients. Pour in the milk, oil, egg, and vanilla extract.
- Stir with a whisk or large spoon until just combined. Do not overmix! A few lumps are okay.
- Gently fold in any chosen add-ins (chocolate chips, berries, nuts, etc.).
- Fill each muffin cup about ¾ full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely (or enjoy warm!).
