Ingredients:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (240ml) milk, any kind (whole milk recommended for richer flavour)
  • ½ cup (120ml) vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (85g) chocolate chips (milk, dark, or semi-sweet)
  • 1 cup (120g) fresh or frozen blueberries
  • ½ cup (50g) chopped nuts (walnuts, pecans, almonds)
  • ½ teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 400°F (200°C, Gas Mark 6). Line a muffin tin with paper liners or grease well.
  2. In the large mixing bowl, whisk together flour, sugar, baking powder, and salt until evenly combined.
  3. Make a well in the center of the dry ingredients. Pour in the milk, oil, egg, and vanilla extract.
  4. Stir with a whisk or large spoon until just combined. Do not overmix! A few lumps are okay.
  5. Gently fold in any chosen add-ins (chocolate chips, berries, nuts, etc.).
  6. Fill each muffin cup about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely (or enjoy warm!).
