Ingredients:

  • 1 box (432g) White cake mix
  • 3 large eggs
  • 1/2 cup (120ml) Vegetable oil
  • 1 cup (240ml) Water
  • 8 oz (225g) Cream cheese, softened
  • 1/2 cup (115g) Unsalted butter, softened
  • 3 cups (360g) Powdered sugar
  • 1 tsp (5ml) Vanilla extract
  • 1 pint (250g) Fresh strawberries, hulled and sliced
  • 1 pint (250g) Fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your 9x13 pan.
  2. Combine the cake mix, eggs, oil, and water. Beat on low speed until the batter is smooth and no large lumps remain.
  3. Pour into the pan and bake for 28-32 minutes until a toothpick inserted in the center comes out clean and the edges slightly pull away from the pan.
  4. Let the cake cool completely before frosting.
  5. Beat the softened cream cheese and butter together until the mixture is pale and fluffy.
  6. Slowly add powdered sugar and vanilla extract, mixing on high until the frosting reaches a velvety, spreadable consistency.
  7. Spread the frosting in an even layer across the cooled cake using an offset spatula.
  8. Create the Union by placing blueberries in the top-left corner in a solid blue rectangle.
  9. Create the Stripes by arranging strawberry slices in horizontal rows across the rest of the cake, leaving white frosting gaps between the red rows.
