Ingredients:
- 1 box (15.25 oz / 432g) white cake mix
- 3 large eggs
- 1 cup (240ml) unsweetened applesauce
- 1 cup (240ml) buttermilk
- 1 tsp (5ml) pure vanilla extract
- 16 oz (450g) heavy whipping cream, chilled
- 2 tbsp (30g) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) fresh blueberries
- 1 cup (150g) fresh raspberries
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
- In a large bowl, combine the white cake mix, eggs, unsweetened applesauce, buttermilk, and vanilla extract.
- Beat the mixture on low speed until the batter is smooth and no flour streaks remain.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until the edges pull away from the sides and the center springs back when touched.
- Allow the cake to cool completely before frosting.
- In a cold bowl, beat the chilled heavy whipping cream, maple syrup, and vanilla extract using an electric mixer until stiff peaks form.
- Spread the whipped cream evenly across the top of the cooled cake using a spatula.
- Arrange blueberries in a rectangle in the top-left corner to create the Union section of the flag.
- Create alternating rows of raspberries and whipped cream across the remaining surface to form the stripes.
