Ingredients:

  • 1 box (15.25 oz / 432g) white cake mix
  • 3 large eggs
  • 1 cup (240ml) unsweetened applesauce
  • 1 cup (240ml) buttermilk
  • 1 tsp (5ml) pure vanilla extract
  • 16 oz (450g) heavy whipping cream, chilled
  • 2 tbsp (30g) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, combine the white cake mix, eggs, unsweetened applesauce, buttermilk, and vanilla extract.
  3. Beat the mixture on low speed until the batter is smooth and no flour streaks remain.
  4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until the edges pull away from the sides and the center springs back when touched.
  5. Allow the cake to cool completely before frosting.
  6. In a cold bowl, beat the chilled heavy whipping cream, maple syrup, and vanilla extract using an electric mixer until stiff peaks form.
  7. Spread the whipped cream evenly across the top of the cooled cake using a spatula.
  8. Arrange blueberries in a rectangle in the top-left corner to create the Union section of the flag.
  9. Create alternating rows of raspberries and whipped cream across the remaining surface to form the stripes.
