  • 1 pint (about 2 cups / 300g) Fresh Strawberries, hulled and sliced
  • 2 tablespoons (25g) Granulated Sugar
  • 1 teaspoon (5ml) Fresh Lemon Juice
  • 1 cup (240ml) Cold Heavy Whipping Cream
  • 2 tablespoons (25g) Powdered Sugar (Icing Sugar)
  • 1 teaspoon (5ml) Vanilla Extract
  • 4 large store-bought Meringue Nests or 1.5 cups small kisses

Instructions:

  1. Prepare the Strawberries: In a medium bowl, gently combine the sliced strawberries, granulated sugar, and lemon juice. Set aside for at least 15 minutes (maceration time) to allow the juices to release.
  2. Whip the Cream: In a large, chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form.
  3. Crumble the Meringue: Break the meringue nests or kisses into rough, uneven chunks, varying the size from small crumbs to 1-inch pieces.
  4. Gentle Assembly (The Mess!): Gently fold about two-thirds of the broken meringue pieces into the whipped cream. Do not overmix; you want visible white streaks.
  5. Layer and Combine: Spoon half of the macerated strawberries (including the juices) into the bottom of your serving glasses or bowls. Top with half of the cream/meringue mixture. Repeat the layering with the remaining strawberries and cream mixture.
  6. Final Flourish: Sprinkle the remaining meringue pieces and a few reserved fresh strawberry slices on top of each serving. Serve immediately for maximum crispness.
