- 1 pint (about 2 cups / 300g) Fresh Strawberries, hulled and sliced
- 2 tablespoons (25g) Granulated Sugar
- 1 teaspoon (5ml) Fresh Lemon Juice
- 1 cup (240ml) Cold Heavy Whipping Cream
- 2 tablespoons (25g) Powdered Sugar (Icing Sugar)
- 1 teaspoon (5ml) Vanilla Extract
- 4 large store-bought Meringue Nests or 1.5 cups small kisses
Instructions:
- Prepare the Strawberries: In a medium bowl, gently combine the sliced strawberries, granulated sugar, and lemon juice. Set aside for at least 15 minutes (maceration time) to allow the juices to release.
- Whip the Cream: In a large, chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form.
- Crumble the Meringue: Break the meringue nests or kisses into rough, uneven chunks, varying the size from small crumbs to 1-inch pieces.
- Gentle Assembly (The Mess!): Gently fold about two-thirds of the broken meringue pieces into the whipped cream. Do not overmix; you want visible white streaks.
- Layer and Combine: Spoon half of the macerated strawberries (including the juices) into the bottom of your serving glasses or bowls. Top with half of the cream/meringue mixture. Repeat the layering with the remaining strawberries and cream mixture.
- Final Flourish: Sprinkle the remaining meringue pieces and a few reserved fresh strawberry slices on top of each serving. Serve immediately for maximum crispness.
