Ingredients:

  • 1 (3 ounce/85g) package Jello gelatin (various flavors/colors - e.g., strawberry, lime, blue raspberry)
  • 1 cup (240 ml) boiling water
  • ½ cup (120 ml) cold water

Instructions:

  1. In a saucepan, bring water to a rolling boil. Remove from heat.
  2. Add one package of Jello to the boiling water. Whisk until completely dissolved (about 2 minutes). Ensure no crystals remain.
  3. Stir in the cold water. Pour the mixture into a heatproof bowl or pitcher.
  4. Carefully pour the Jello mixture into the popsicle molds, filling each mold about 1/3 full (adjust based on how many layers you plan).
  5. Place the molds in the freezer for approximately 1-2 hours, or until the layer is partially set but not completely frozen solid (it should still be a bit jiggly).
  6. Repeat steps 1-5 with different Jello flavors/colors for each subsequent layer. Remember to let each layer partially set before adding the next.
  7. Once the final layer is poured and partially set, gently insert popsicle sticks into the center of each mold.
  8. Return the molds to the freezer and freeze completely for at least 4-6 hours, or preferably overnight.
  9. To unmold jello popsicles, briefly run the molds under warm water for a few seconds. Gently pull on the popsicle stick to release the popsicle.
