Ingredients:

  • 1 lb (450g) carrots, peeled and cut into batons
  • 2 tablespoons (30ml) olive oil
  • 1/2 teaspoon (2g) salt
  • 1/4 teaspoon (1g) black pepper
  • 2 tablespoons (30g) honey
  • 1 tablespoon (15ml) soy sauce
  • 1 teaspoon (5g) chili flakes
  • Zest of half an orange
  • Juice of half an orange (about 1 tablespoon or 15ml)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the carrots into uniform batons for even cooking.
  3. In a bowl, combine carrots with olive oil, salt, and pepper. Toss to coat evenly.
  4. In a separate bowl, whisk together honey, soy sauce, chili flakes, orange zest, and orange juice until smooth.
  5. Pour the glaze over the carrots and toss well to ensure all pieces are coated.
  6. Spread the glazed carrots in a single layer on the baking sheet.
  7. Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and caramelized.
  8. Once done, remove from oven. Optionally, garnish with additional orange zest before serving.
