Ingredients:
- 1 lb (450g) carrots, peeled and cut into batons
- 2 tablespoons (30ml) olive oil
- 1/2 teaspoon (2g) salt
- 1/4 teaspoon (1g) black pepper
- 2 tablespoons (30g) honey
- 1 tablespoon (15ml) soy sauce
- 1 teaspoon (5g) chili flakes
- Zest of half an orange
- Juice of half an orange (about 1 tablespoon or 15ml)
Instructions:
- Preheat the oven to 425°F (220°C).
- Peel and cut the carrots into uniform batons for even cooking.
- In a bowl, combine carrots with olive oil, salt, and pepper. Toss to coat evenly.
- In a separate bowl, whisk together honey, soy sauce, chili flakes, orange zest, and orange juice until smooth.
- Pour the glaze over the carrots and toss well to ensure all pieces are coated.
- Spread the glazed carrots in a single layer on the baking sheet.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until tender and caramelized.
- Once done, remove from oven. Optionally, garnish with additional orange zest before serving.
