Ingredients:
- 1 whole beef sirloin (approximately 3-4 kg or 6-8 lbs)
- Salt and freshly ground black pepper to taste
- 2 tablespoons unsalted butter, softened (28 g)
- 2 tablespoons olive oil (30 mL)
- 4 garlic cloves, minced
- 2 cups fresh parsley, finely chopped (60 g)
- 2 tablespoons fresh rosemary, finely chopped (30 g)
- 2 tablespoons fresh thyme, finely chopped (30 g)
- Zest of 1 lemon
- ½ teaspoon red pepper flakes (optional)
Instructions:
- Trim any excess fat from the sirloin and tie it with kitchen twine for an even roast.
- Rub the beef with olive oil, salt, and pepper.
- In a bowl, combine minced garlic, parsley, rosemary, thyme, lemon zest, and red pepper flakes.
- Mix well and then spread the softened butter evenly over the beef.
- Press the herb mixture into the buttered surface of the beef.
- Preheat the oven to 220°C (425°F).
- Place the sirloin in a roasting pan and insert a meat thermometer into the thickest part.
- Roast in the oven for approximately 60-80 minutes, or until the internal temperature reaches 50°C (120°F) for medium-rare.
- Remove from the oven and cover loosely with foil.
- Let it rest for at least 15 minutes before carving.
- Carve the beef into slices against the grain and serve with your choice of sides.
