Ingredients:

  • 1 whole beef sirloin (approximately 3-4 kg or 6-8 lbs)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter, softened (28 g)
  • 2 tablespoons olive oil (30 mL)
  • 4 garlic cloves, minced
  • 2 cups fresh parsley, finely chopped (60 g)
  • 2 tablespoons fresh rosemary, finely chopped (30 g)
  • 2 tablespoons fresh thyme, finely chopped (30 g)
  • Zest of 1 lemon
  • ½ teaspoon red pepper flakes (optional)

Instructions:

  1. Trim any excess fat from the sirloin and tie it with kitchen twine for an even roast.
  2. Rub the beef with olive oil, salt, and pepper.
  3. In a bowl, combine minced garlic, parsley, rosemary, thyme, lemon zest, and red pepper flakes.
  4. Mix well and then spread the softened butter evenly over the beef.
  5. Press the herb mixture into the buttered surface of the beef.
  6. Preheat the oven to 220°C (425°F).
  7. Place the sirloin in a roasting pan and insert a meat thermometer into the thickest part.
  8. Roast in the oven for approximately 60-80 minutes, or until the internal temperature reaches 50°C (120°F) for medium-rare.
  9. Remove from the oven and cover loosely with foil.
  10. Let it rest for at least 15 minutes before carving.
  11. Carve the beef into slices against the grain and serve with your choice of sides.
