Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground cloves
- 1 tsp (2g) ground ginger
- 1 tbsp (12g) baking powder
- ½ tsp (3g) kosher salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) packed light brown sugar
- 3 large eggs
- 1 tsp (5ml) pure vanilla extract
- 1 cup (240ml) full-fat buttermilk
- 1 cup (200g) granulated white sugar
- 6 tbsp (85g) unsalted butter, cubed
- ½ cup (120ml) heavy cream, room temperature
- 1 tsp (6g) flaky sea salt
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) pure vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, cloves, ginger, baking powder, and kosher salt.
- Using a stand mixer, cream the softened butter and brown sugar until pale and fluffy. Incorporate eggs one at a time, then stir in the vanilla extract.
- Alternating between the dry ingredient mixture and buttermilk, mix on low speed until just combined; do not overmix.
- Pour batter into the pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- In a heavy-bottomed saucepan, heat granulated sugar over medium heat, stirring constantly until melted into a deep amber liquid (approximately 340°F/170°C).
- Immediately stir in cubed butter until melted, then slowly pour in the room-temperature heavy cream. Simmer for 2 minutes.
- Remove from heat, stir in the flaky sea salt, and allow the sauce to cool completely to thicken.
- Once the cake is completely cool, spread the whipped cream cheese frosting in an even layer across the top.
- Drizzle the cooled salted caramel sauce over the frosting and finish with an extra pinch of flaky salt.
