Ingredients:

  • 12 cups mixed cereals (Chex, Rice Chex, Corn Chex), about 340g
  • 4 cups pretzel twists (mini or regular size), about 113g
  • 2 cups mini marshmallows, about 57g
  • 1 cup salted peanuts, about 142g
  • 1 pound (16 ounces, 454g) white chocolate chips
  • 1/4 cup vegetable oil or coconut oil
  • 1/2 cup Christmas sprinkles
  • 1/4 teaspoon sea salt (optional)

Instructions:

  1. In a large mixing bowl, combine the cereals, pretzels, marshmallows, and peanuts. Toss gently to mix evenly.
  2. Place the white chocolate chips and oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth. Alternatively, melt in a double boiler.
  3. Pour the melted white chocolate over the dry ingredient mixture. Gently fold with a spatula or large spoon until all the ingredients are evenly coated. Work quickly.
  4. Spread the coated mixture in an even layer on a baking sheet lined with parchment paper.
  5. Immediately sprinkle the Christmas sprinkles evenly over the mixture. If desired, sprinkle with sea salt.
  6. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely set.
  7. Once set, break the snack mix into bite-sized pieces. Store in an airtight container at room temperature or in the refrigerator.
