Ingredients:
- 12 cups mixed cereals (Chex, Rice Chex, Corn Chex), about 340g
- 4 cups pretzel twists (mini or regular size), about 113g
- 2 cups mini marshmallows, about 57g
- 1 cup salted peanuts, about 142g
- 1 pound (16 ounces, 454g) white chocolate chips
- 1/4 cup vegetable oil or coconut oil
- 1/2 cup Christmas sprinkles
- 1/4 teaspoon sea salt (optional)
Instructions:
- In a large mixing bowl, combine the cereals, pretzels, marshmallows, and peanuts. Toss gently to mix evenly.
- Place the white chocolate chips and oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth. Alternatively, melt in a double boiler.
- Pour the melted white chocolate over the dry ingredient mixture. Gently fold with a spatula or large spoon until all the ingredients are evenly coated. Work quickly.
- Spread the coated mixture in an even layer on a baking sheet lined with parchment paper.
- Immediately sprinkle the Christmas sprinkles evenly over the mixture. If desired, sprinkle with sea salt.
- Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely set.
- Once set, break the snack mix into bite-sized pieces. Store in an airtight container at room temperature or in the refrigerator.
