Ingredients:

  • 4 large fresh peaches, sliced into ½-inch wedges
  • 2 tbsp unsalted butter
  • ¼ cup light brown sugar, packed
  • ½ tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • Pinch of kosher salt
  • 1 pint premium vanilla ice cream

Instructions:

  1. Pat the sliced peaches dry with a paper towel to ensure they sear rather than steam.
  2. In a small bowl, whisk together the brown sugar and cinnamon. Toss the peach wedges in this mixture until every slice is evenly coated.
  3. Place a 12-inch non-stick skillet or cast-iron pan over medium-high heat and melt the butter until it begins to foam.
  4. Add the peaches in a single layer and sear for 3–4 minutes without moving them until they develop a mahogany-colored crust.
  5. Flip the slices and cook for another 3 minutes until they are tender but still hold their shape.
  6. Stir in the lemon juice and a pinch of salt, scraping up any browned bits from the bottom of the pan.
  7. Once the sauce has thickened into a glossy syrup (about 1 minute), remove from heat.
  8. Immediately scoop vanilla ice cream into bowls and spoon the hot peaches and syrup over the top.
