Ingredients:

  • 1 pound (450g) fresh turnip greens, stemmed and chopped
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Rinse turnip greens well to remove any grit; trim any tough stems and chop into bite-sized pieces.
  2. In a large sauté pan, heat olive oil over medium heat.
  3. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  4. Stir in the turnip greens, ensuring they get a nice coating of oil.
  5. Sauté for about 5-7 minutes, or until the greens are wilted but still vibrant.
  6. Remove from heat, then stir in lemon zest, lemon juice, salt, and pepper to taste.
  7. Transfer to a serving dish and enjoy!
