Ingredients:

  • 1 tablespoon olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated Gruyère cheese, plus additional for topping
  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and sauté for 12-15 minutes, stirring occasionally, until deep golden brown.
  3. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Set aside to cool.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, thyme, salt, and pepper.
  5. Add cooled caramelized onion mixture and half of the grated Gruyère. Mix until just combined.
  6. Preheat the oven to 350°F (175°C). Transfer meat mixture to a loaf pan, shaping into an even loaf.
  7. Create a shallow groove along the center and fill with extra Gruyère cheese.
  8. In a small bowl, mix ketchup, brown sugar, and Dijon mustard for the glaze. Spread glaze evenly over the meatloaf.
  9. Bake for 1 hour or until the internal temperature reaches 160°F (71°C). Sprinkle some additional Gruyère on top 10 minutes before removing from the oven.
  10. Let the meatloaf rest for 10 minutes before slicing and serving.
