Ingredients:
- 1 tablespoon olive oil
- 2 medium onions, thinly sliced
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 cup breadcrumbs
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup grated Gruyère cheese, plus additional for topping
- ¼ cup ketchup
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add onions and sauté for 12-15 minutes, stirring occasionally, until deep golden brown.
- Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Set aside to cool.
- In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, thyme, salt, and pepper.
- Add cooled caramelized onion mixture and half of the grated Gruyère. Mix until just combined.
- Preheat the oven to 350°F (175°C). Transfer meat mixture to a loaf pan, shaping into an even loaf.
- Create a shallow groove along the center and fill with extra Gruyère cheese.
- In a small bowl, mix ketchup, brown sugar, and Dijon mustard for the glaze. Spread glaze evenly over the meatloaf.
- Bake for 1 hour or until the internal temperature reaches 160°F (71°C). Sprinkle some additional Gruyère on top 10 minutes before removing from the oven.
- Let the meatloaf rest for 10 minutes before slicing and serving.
