Ingredients:

  • 1 large green cabbage (about 2-3 pounds or 900-1350g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon garlic powder (5g)
  • ½ teaspoon smoked paprika (2g)
  • Salt and pepper, to taste
  • ¼ cup fresh parsley, chopped (15g)
  • ¼ cup fresh basil, chopped (15g)
  • 2 tablespoons lemon juice (30ml)
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes (optional, 1g)

Instructions:

  1. Remove any tough outer leaves from the cabbage and cut the cabbage into 1-inch thick slices (steaks).
  2. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Brush the mixture onto both sides of each cabbage steak.
  3. In another bowl, combine chopped parsley, basil, lemon juice, minced garlic, and red pepper flakes (if using). Mix until well combined and set aside.
  4. Preheat your grill or grill pan over medium-high heat. Place the cabbage steaks on the grill; cook for about 6-8 minutes per side, or until charred and tender. Use a basting brush to apply the herb oil before flipping.
  5. Remove the cabbage steaks from the grill and drizzle with remaining herb oil before serving.
