Ingredients:

  • 1 cup (240g) Full-Fat (4% M.F.) Cottage Cheese
  • 1/2 teaspoon Fresh Lemon Zest
  • 1/4 teaspoon Freshly Cracked Black Pepper
  • 1/4 teaspoon Flaky Sea Salt (for base)
  • 1 lb (450g) Mixed Heirloom Tomatoes, chopped
  • 2 tablespoons (30ml) Extra Virgin Olive Oil, high quality
  • 1 teaspoon Aged Balsamic Glaze
  • 2 tablespoons Fresh Basil Leaves, finely chopped (Chiffonade)
  • 1 tablespoon Red Onion, very finely minced (or 1 small shallot)
  • Pinch Flaky Sea Salt and Black Pepper (for topping)
  • 2 teaspoons Everything Bagel Seasoning

Instructions:

  1. Dice the heirloom tomatoes into uniform 1cm (½-inch) pieces and transfer them to a small mixing bowl. Finely mince the red onion or shallot and add to the tomatoes.
  2. Dress the topping: Drizzle the Extra Virgin Olive Oil and Balsamic Glaze over the tomatoes. Season lightly with flaky salt and pepper. Gently toss the tomato mixture to coat, being careful not to crush the tomatoes. Stir in the chopped fresh basil right before assembly to maintain its vibrant green colour and aroma.
  3. Season the Cottage Cheese Base: Place the cottage cheese into a medium bowl. Stir in the fresh lemon zest, cracked black pepper, and 1/4 teaspoon of flaky sea salt. Taste and adjust seasoning; the base should be bright and tangy. Distribute the seasoned cottage cheese evenly between the two serving bowls, creating a smooth foundation.
  4. Assemble and Finish: Carefully spoon the heirloom tomato mixture directly over the top of the cottage cheese base in each bowl. Ensure a good amount of the olive oil/balsamic liquid drizzles down the sides. Sprinkle 1 teaspoon of Everything Bagel Seasoning over the tomato topping in each bowl and serve immediately.
