Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground turkey (454 g)
  • 1 medium yellow onion, chopped (approx. 1 cup) (150 g)
  • 2 cloves garlic, minced (approx. 1 teaspoon) (5 g)
  • 1 tablespoon chili powder (15 ml)
  • 1 teaspoon ground cumin (5 ml)
  • 1/2 teaspoon smoked paprika (2.5 ml)
  • 1/4 teaspoon cayenne pepper (adjust to taste) (1.25 ml)
  • 1/2 teaspoon dried oregano (2.5 ml)
  • 1/2 teaspoon salt (2.5 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • 1/2 cup water (120 ml)
  • 1 tablespoon tomato paste (15 ml)
  • 12 corn or flour tortillas (6-inch)
  • shredded lettuce
  • chopped tomatoes
  • shredded cheese (cheddar, Monterey Jack, or a blend)
  • sour cream
  • salsa
  • guacamole
  • sliced jalapeños

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Add ground turkey to the skillet and break it up with a spoon. Cook until browned, about 7-8 minutes, making sure to drain off any excess fat.
  3. Stir in chili powder, cumin, smoked paprika, cayenne pepper, oregano, salt, and pepper. Cook for 1 minute, allowing the spices to bloom.
  4. Add water and tomato paste to the skillet. Stir well to combine. Bring to a simmer, then reduce heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
  5. While the turkey is simmering, warm the tortillas according to package directions (microwave, oven, or skillet).
  6. Fill each tortilla with the seasoned ground turkey mixture and your desired toppings.
