Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground turkey (454 g)
- 1 medium yellow onion, chopped (approx. 1 cup) (150 g)
- 2 cloves garlic, minced (approx. 1 teaspoon) (5 g)
- 1 tablespoon chili powder (15 ml)
- 1 teaspoon ground cumin (5 ml)
- 1/2 teaspoon smoked paprika (2.5 ml)
- 1/4 teaspoon cayenne pepper (adjust to taste) (1.25 ml)
- 1/2 teaspoon dried oregano (2.5 ml)
- 1/2 teaspoon salt (2.5 ml)
- 1/4 teaspoon black pepper (1.25 ml)
- 1/2 cup water (120 ml)
- 1 tablespoon tomato paste (15 ml)
- 12 corn or flour tortillas (6-inch)
- shredded lettuce
- chopped tomatoes
- shredded cheese (cheddar, Monterey Jack, or a blend)

- salsa
- guacamole
- sliced jalapeños
Instructions:
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Add ground turkey to the skillet and break it up with a spoon. Cook until browned, about 7-8 minutes, making sure to drain off any excess fat.
- Stir in chili powder, cumin, smoked paprika, cayenne pepper, oregano, salt, and pepper. Cook for 1 minute, allowing the spices to bloom.
- Add water and tomato paste to the skillet. Stir well to combine. Bring to a simmer, then reduce heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
- While the turkey is simmering, warm the tortillas according to package directions (microwave, oven, or skillet).
- Fill each tortilla with the seasoned ground turkey mixture and your desired toppings.
