Ingredients:

  • 4 oz (120 ml) ginger beer
  • 1 oz (30 ml) fresh lime juice
  • 1/2 oz (15 ml) simple syrup (optional)
  • Lime wedges (for garnish)
  • Fresh mint leaves (for garnish)

Instructions:

  1. Gather all the ingredients and equipment. Measure out the dark rum, ginger beer, fresh lime juice, and simple syrup.
  2. In a cocktail shaker, combine the dark rum, lime juice, and simple syrup (if using). Fill the shaker with ice, covering the liquid.
  3. Secure the lid on the shaker. Shake vigorously for about 15 seconds until well chilled.
  4. Strain the mixture into a glass filled with fresh ice. Top with ginger beer and stir gently to combine.
  5. Garnish with a lime wedge and a sprig of fresh mint.
