Ingredients:
- 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and slightly cooled
- ¾ cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking soda
- ¼ tsp (1.5g) salt
- 1 ½ cups (190g) all-purpose flour
- ½ cup (85g) semi-sweet chocolate chips
- ½ cup (60g) chopped walnuts or pecans
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Note: Doing this first ensures the pan is ready as soon as the batter is.
- In a large mixing bowl, mash the bananas with a fork until smooth with only a few small lumps remaining.
- Stir the melted butter into the mashed bananas.
- Add the granulated sugar, beaten egg, and vanilla extract. Mix until the batter is glossy and uniform.
- Sprinkle the baking soda and salt over the wet mixture and stir.
- Gently fold in the flour using a spatula, stopping as soon as no streaks of white flour remain. Note: Overmixing here is the number one cause of tough bread.
- Fold in chocolate chips or nuts with two or three final strokes.
- Pour the batter into the prepared pan.
- Bake for 60–65 minutes until a toothpick inserted into the center comes out clean.
