Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) baking soda
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (85g) semi-sweet chocolate chips
  • ½ cup (60g) chopped walnuts or pecans

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Note: Doing this first ensures the pan is ready as soon as the batter is.
  2. In a large mixing bowl, mash the bananas with a fork until smooth with only a few small lumps remaining.
  3. Stir the melted butter into the mashed bananas.
  4. Add the granulated sugar, beaten egg, and vanilla extract. Mix until the batter is glossy and uniform.
  5. Sprinkle the baking soda and salt over the wet mixture and stir.
  6. Gently fold in the flour using a spatula, stopping as soon as no streaks of white flour remain. Note: Overmixing here is the number one cause of tough bread.
  7. Fold in chocolate chips or nuts with two or three final strokes.
  8. Pour the batter into the prepared pan.
  9. Bake for 60–65 minutes until a toothpick inserted into the center comes out clean.
