Ingredients:
- 2 lbs fresh peaches, peeled and sliced
- 2 tbsp fresh lemon juice
- 3 tbsp pure maple syrup
- 1 tsp ground cinnamon
- 1 tbsp cornstarch
- 1/4 tsp sea salt
- 1 cup old-fashioned rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, solid but soft
- 3 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
Instructions:
- In a large bowl, combine the sliced peaches, lemon juice, maple syrup, cinnamon, and salt.
- Sprinkle the cornstarch over the peaches and toss gently until the fruit is evenly coated and the powder disappears.
- Pour the peach mixture into a 9x9 inch baking dish, spreading them into an even layer.
- In a medium bowl, whisk together the rolled oats, almond flour, cinnamon, and salt.
- Use a fork or fingertips to work the coconut oil into the oat mixture until it resembles coarse, sandy crumbs.
- Drizzle in the maple syrup and stir until the topping clumps together slightly.
- Sprinkle the oat mixture evenly over the peaches without pressing down.
- Bake in a preheated oven at 375°F (190°C) for 40–45 minutes until fruit juices bubble and topping is deep golden brown.
