Ingredients:

  • 2 lbs fresh peaches, peeled and sliced
  • 2 tbsp fresh lemon juice
  • 3 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1/4 tsp sea salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, solid but soft
  • 3 tbsp pure maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt

Instructions:

  1. In a large bowl, combine the sliced peaches, lemon juice, maple syrup, cinnamon, and salt.
  2. Sprinkle the cornstarch over the peaches and toss gently until the fruit is evenly coated and the powder disappears.
  3. Pour the peach mixture into a 9x9 inch baking dish, spreading them into an even layer.
  4. In a medium bowl, whisk together the rolled oats, almond flour, cinnamon, and salt.
  5. Use a fork or fingertips to work the coconut oil into the oat mixture until it resembles coarse, sandy crumbs.
  6. Drizzle in the maple syrup and stir until the topping clumps together slightly.
  7. Sprinkle the oat mixture evenly over the peaches without pressing down.
  8. Bake in a preheated oven at 375°F (190°C) for 40–45 minutes until fruit juices bubble and topping is deep golden brown.
