Ingredients:

  • 225g (1 cup/2 sticks) unsalted butter, softened, plus extra for greasing the pan
  • 200g (1 cup) granulated sugar
  • 100g (1/2 cup) packed light brown sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 240ml (1 cup) milk
  • 280g (2 1/4 cups) all-purpose flour, plus extra for dusting the pan
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 225g (1 1/2 cups) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour (or use baking spray) a 9x5 inch loaf pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
  3. Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined – be careful not to overmix.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean (or with a few melted chocolate chips clinging).
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
