Ingredients:
- 225g (1 cup/2 sticks) unsalted butter, softened, plus extra for greasing the pan
- 200g (1 cup) granulated sugar
- 100g (1/2 cup) packed light brown sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 240ml (1 cup) milk
- 280g (2 1/4 cups) all-purpose flour, plus extra for dusting the pan
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 225g (1 1/2 cups) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour (or use baking spray) a 9x5 inch loaf pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
- Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined – be careful not to overmix.
- Gently fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean (or with a few melted chocolate chips clinging).
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
