Ingredients:

  • 1 1/2 oz (45 ml) Gin (London Dry recommended)
  • 1/2 oz (15 ml) Cherry Liqueur (Cherry Heering preferred)
  • 1/4 oz (7.5 ml) Cointreau (or other orange liqueur)
  • 4 oz (120 ml) Pineapple Juice (freshly squeezed is best, but good quality canned works too)
  • 1/2 oz (15 ml) Lime Juice (freshly squeezed)
  • 1/4 oz (7.5 ml) Benedictine (or other herbal liqueur)
  • Dash of Angostura Bitters
  • 2 oz (60 ml) Club Soda (to top)
  • Garnish: Pineapple wedge, maraschino cherry

Instructions:

  1. Fill the highball glass with ice to chill.
  2. In a cocktail shaker, combine gin, cherry liqueur, Cointreau, pineapple juice, lime juice, Benedictine, and Angostura bitters.
  3. Fill the shaker with ice.
  4. Shake vigorously for 15-20 seconds, until well-chilled.
  5. Empty the ice from the chilled glass and strain the cocktail into the glass.
  6. Top with club soda.
  7. Garnish with a pineapple wedge and a maraschino cherry.
