Ingredients:
- 1 1/2 oz (45 ml) Gin (London Dry recommended)
- 1/2 oz (15 ml) Cherry Liqueur (Cherry Heering preferred)
- 1/4 oz (7.5 ml) Cointreau (or other orange liqueur)
- 4 oz (120 ml) Pineapple Juice (freshly squeezed is best, but good quality canned works too)
- 1/2 oz (15 ml) Lime Juice (freshly squeezed)
- 1/4 oz (7.5 ml) Benedictine (or other herbal liqueur)
- Dash of Angostura Bitters
- 2 oz (60 ml) Club Soda (to top)
- Garnish: Pineapple wedge, maraschino cherry
Instructions:
- Fill the highball glass with ice to chill.
- In a cocktail shaker, combine gin, cherry liqueur, Cointreau, pineapple juice, lime juice, Benedictine, and Angostura bitters.
- Fill the shaker with ice.
- Shake vigorously for 15-20 seconds, until well-chilled.
- Empty the ice from the chilled glass and strain the cocktail into the glass.
- Top with club soda.
- Garnish with a pineapple wedge and a maraschino cherry.
