Ingredients:

  • 1 (15 ounce / 425g) can black beans, rinsed and drained
  • 1 (15 ounce / 425g) can kidney beans, rinsed and drained
  • 1 (15 ounce / 425g) can pinto beans, rinsed and drained
  • 1 (15 ounce / 425g) can whole kernel corn, undrained
  • 1 (10 ounce / 283g) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 (10.75 ounce / 305g) can condensed tomato soup
  • 1 packet (1 ounce / 28g) taco seasoning
  • 1 cup (240ml) water or broth (chicken or vegetable)

Instructions:

  1. In a large pot, combine all canned beans (rinsed and drained), corn (undrained), diced tomatoes and green chilies (undrained), condensed tomato soup, taco seasoning, and water (or broth).
  2. Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
  3. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, allowing the flavors to meld.
  4. Ladle into bowls and top with your favourite toppings.
