Ingredients:
- 1 (15 ounce / 425g) can black beans, rinsed and drained
- 1 (15 ounce / 425g) can kidney beans, rinsed and drained
- 1 (15 ounce / 425g) can pinto beans, rinsed and drained
- 1 (15 ounce / 425g) can whole kernel corn, undrained
- 1 (10 ounce / 283g) can diced tomatoes and green chilies (like Rotel), undrained
- 1 (10.75 ounce / 305g) can condensed tomato soup
- 1 packet (1 ounce / 28g) taco seasoning
- 1 cup (240ml) water or broth (chicken or vegetable)
Instructions:
- In a large pot, combine all canned beans (rinsed and drained), corn (undrained), diced tomatoes and green chilies (undrained), condensed tomato soup, taco seasoning, and water (or broth).
- Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
- Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, allowing the flavors to meld.
- Ladle into bowls and top with your favourite toppings.
