Ingredients:

  • 1 lb (450g) fresh green beans, trimmed
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 inch (2.5cm) ginger, peeled and minced
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds, toasted
  • 1 green onion, thinly sliced

Instructions:

  1. Wash and trim the green beans. Make sure they're dry.
  2. In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, and red pepper flakes (if using).
  3. Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
  4. Add the green beans to the hot wok. Stir-fry vigorously for 5-7 minutes, until they are bright green and slightly blistered/tender-crisp.
  5. Add the minced garlic and ginger to the wok. Stir-fry for about 30 seconds, until fragrant.
  6. Pour the prepared sauce over the green beans. Stir-fry for another minute or two, until the sauce thickens slightly and coats the beans evenly.
  7. Remove from heat. Garnish with toasted sesame seeds and sliced green onions. Serve immediately.
