Ingredients:
- 1 lb (450g) fresh green beans, trimmed
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 inch (2.5cm) ginger, peeled and minced
- 2 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon sesame seeds, toasted
- 1 green onion, thinly sliced
Instructions:
- Wash and trim the green beans. Make sure they're dry.
- In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, and red pepper flakes (if using).
- Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
- Add the green beans to the hot wok. Stir-fry vigorously for 5-7 minutes, until they are bright green and slightly blistered/tender-crisp.
- Add the minced garlic and ginger to the wok. Stir-fry for about 30 seconds, until fragrant.
- Pour the prepared sauce over the green beans. Stir-fry for another minute or two, until the sauce thickens slightly and coats the beans evenly.
- Remove from heat. Garnish with toasted sesame seeds and sliced green onions. Serve immediately.
