Ingredients:
- 1 lb beef flap meat, trimmed
- 1/4 cup olive oil
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 ripe avocado, pitted and peeled
- 1/4 cup plain Greek yogurt or sour cream
- 1/4 cup fresh cilantro leaves
- 1 tbsp lime juice
- 8 small corn or flour tortillas
- Optional toppings: diced onions, chopped fresh cilantro, sliced radishes, lime wedges
Instructions:
- In a mixing bowl, combine olive oil, soy sauce, lime juice, minced garlic, cumin, paprika, black pepper, and salt.
- Add the beef flap meat to the marinade, ensuring all surfaces are coated. Cover and refrigerate for at least 1 hour.
- In a blender, combine the avocado, Greek yogurt, cilantro, lime juice, and a pinch of salt. Blend until smooth; adjust seasoning if necessary.
- Preheat the grill or grill pan over medium-high heat. Remove the beef from the marinade, letting excess drip off. Grill for about 3-4 minutes per side.
- Transfer the beef to a cutting board, covering it with foil for 5 minutes. Slice against the grain into thin strips.
- On the grill or a skillet, warm the tortillas for about 30 seconds on each side until pliable.
- Place sliced beef on tortillas, drizzle with avocado-cilantro sauce, and top with desired garnishes.
