Ingredients:

  • 1 lb beef flap meat, trimmed
  • 1/4 cup olive oil
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 ripe avocado, pitted and peeled
  • 1/4 cup plain Greek yogurt or sour cream
  • 1/4 cup fresh cilantro leaves
  • 1 tbsp lime juice
  • 8 small corn or flour tortillas
  • Optional toppings: diced onions, chopped fresh cilantro, sliced radishes, lime wedges

Instructions:

  1. In a mixing bowl, combine olive oil, soy sauce, lime juice, minced garlic, cumin, paprika, black pepper, and salt.
  2. Add the beef flap meat to the marinade, ensuring all surfaces are coated. Cover and refrigerate for at least 1 hour.
  3. In a blender, combine the avocado, Greek yogurt, cilantro, lime juice, and a pinch of salt. Blend until smooth; adjust seasoning if necessary.
  4. Preheat the grill or grill pan over medium-high heat. Remove the beef from the marinade, letting excess drip off. Grill for about 3-4 minutes per side.
  5. Transfer the beef to a cutting board, covering it with foil for 5 minutes. Slice against the grain into thin strips.
  6. On the grill or a skillet, warm the tortillas for about 30 seconds on each side until pliable.
  7. Place sliced beef on tortillas, drizzle with avocado-cilantro sauce, and top with desired garnishes.
