Ingredients:
- 1 pound (450g) fresh green beans, trimmed
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 inch (2.5 cm) ginger, peeled and minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, for extra umami)
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon sesame seeds, for garnish
- 1 scallion (green onion), thinly sliced, for garnish
Instructions:
- Wash and trim the green beans. Cut them in half if they are particularly long.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and ginger; cook until fragrant (about 30 seconds).
- Add the green beans to the skillet. Stir-fry for 5-7 minutes, until they are tender-crisp and slightly blistered.
- In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes (if using).
- Pour the sauce over the green beans and toss to coat. Cook for another minute, until the sauce has thickened slightly.
- Sprinkle with sesame seeds and sliced scallions. Serve immediately.
