Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 inch (2.5 cm) ginger, peeled and minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for extra umami)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon sesame seeds, for garnish
  • 1 scallion (green onion), thinly sliced, for garnish

Instructions:

  1. Wash and trim the green beans. Cut them in half if they are particularly long.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and ginger; cook until fragrant (about 30 seconds).
  3. Add the green beans to the skillet. Stir-fry for 5-7 minutes, until they are tender-crisp and slightly blistered.
  4. In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes (if using).
  5. Pour the sauce over the green beans and toss to coat. Cook for another minute, until the sauce has thickened slightly.
  6. Sprinkle with sesame seeds and sliced scallions. Serve immediately.
