Ingredients:

  • 1.5 lbs (680g) Ground Beef (80/20 blend recommended)
  • 1 small Yellow Onion, finely diced (about ½ cup or 75g)
  • 2 cloves Garlic, minced
  • 1 large Egg, lightly beaten
  • 2 tablespoons Worcestershire Sauce (30ml)
  • 1 tablespoon Dijon Mustard (15ml)
  • 1 teaspoon Smoked Paprika (5ml)
  • ½ teaspoon Garlic Powder (2.5ml)
  • ½ teaspoon Onion Powder (2.5ml)
  • Salt and freshly ground Black Pepper, to taste
  • 2 tablespoons Vegetable Oil or other high-heat oil, for cooking (30ml)
  • 4 Burger Buns (Brioche, sesame seed, or your favourite)
  • Toppings of your choice: Lettuce, Tomato, Onion, Pickles, Cheese, Bacon, etc.
  • Condiments of your choice: Ketchup, Mustard, Mayonnaise, Burger Sauce, etc.

Instructions:

  1. Gently combine ground beef, diced onion, minced garlic, beaten egg, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, and pepper in a large bowl. Do not overmix!
  2. Divide the mixture into four equal portions. Gently form each portion into a patty, about ¾ inch thick. Make a small indent in the centre of each patty to prevent them from puffing up during cooking.
  3. Cover the patties with plastic wrap and refrigerate for at least 15 minutes. This helps them hold their shape and stay juicy.
  4. Heat the vegetable oil in a large cast iron skillet (or heavy-bottomed frying pan) over medium-high heat until shimmering. The pan needs to be HOT!
  5. Carefully place the patties into the hot skillet, leaving space between them. Sear for 3-4 minutes per side, until a dark, golden-brown crust forms.
  6. Reduce the heat to medium and continue cooking for another 5-8 minutes, or until the internal temperature reaches your desired doneness (160°F/71°C for medium). If the burgers start to brown too quickly, reduce the heat further.
  7. Remove the burgers from the skillet and let them rest for a few minutes before serving. This allows the juices to redistribute, resulting in a juicier burger.
  8. Toast the burger buns if desired. Assemble the burgers with your favourite toppings and condiments. Serve immediately and enjoy these delicious stove top burgers!
