Ingredients:

  • 16 sticks (approx. 450 g) low-moisture, part-skim mozzarella string cheese
  • 1 tablespoon (15 ml) neutral oil or cooking spray, for misting
  • ½ cup (60 g) all-purpose flour
  • ½ teaspoon (2.5 g) fine sea salt
  • ¼ teaspoon (1.25 g) freshly cracked black pepper
  • 3 large eggs
  • 1 tablespoon (15 ml) milk or water
  • 1 ½ cups (75 g) Panko breadcrumbs
  • ¼ cup (25 g) finely grated Parmesan cheese
  • 1 teaspoon (5 g) dried Italian seasoning blend
  • ½ teaspoon (2.5 g) garlic powder
  • 1 cup (240 ml) high-quality marinara sauce, warmed (for serving)

Instructions:

  1. Prepare the Cheese and Breading Stations: Ensure the mozzarella sticks are completely dry by patting them with paper towels. Set up three shallow dishes: (1) Combine flour, salt, and pepper. (2) Whisk eggs and milk/water. (3) Combine Panko, Parmesan, Italian seasoning, and garlic powder; mix thoroughly.
  2. Perform the First Dredge: Take one mozzarella stick and roll it completely in the Flour mix (shaking off excess). Dip quickly into the Egg wash, ensuring full coverage. Roll thoroughly in the Panko mixture, pressing firmly so the crumbs adhere everywhere.
  3. Perform the Second Dredge (Double Coating): Dip the coated stick back into the Egg wash, then roll again in the Panko mixture, pressing firmly. This double coating is essential for a sturdy, leak-proof stick during baking.
  4. Arrange and Freeze: Place the double-coated sticks onto a parchment-lined baking sheet, ensuring they do not touch. Transfer the tray to the freezer for a minimum of 2 hours, or until rock solid. This step is non-negotiable for success.
  5. Preheat the Oven: Preheat the oven to 200°C / 400°F. Line a baking sheet with parchment paper or place a wire rack on the sheet.
  6. Arrange, Mist, and Bake: Remove the frozen sticks. Arrange them evenly on the prepared sheet. Lightly mist the surface of the sticks with neutral oil or cooking spray to promote browning. Bake for 10 to 12 minutes. Do not overbake; pull them out when they are deep golden brown and just showing signs of bubbling cheese.
  7. Serve Immediately: Transfer the baked mozzarella sticks to a serving platter and serve straight away with warm marinara sauce.
