Ingredients:

  • 1 ½ cups finely crushed graham crackers (or digestive biscuits)
  • ¼ cup granulated sweetener (e.g., erythritol or xylitol blend)
  • 6 tablespoons unsalted butter, melted
  • 1 cup natural, creamy peanut butter
  • 8 oz light/reduced-fat cream cheese, softened
  • ½ cup granulated sweetener (e.g., erythritol or xylitol blend)
  • 1 teaspoon pure vanilla extract
  • ½ cup unsweetened almond milk (or skim milk)
  • 1 teaspoon unflavoured gelatin powder (optional)
  • ½ cup heavy whipping cream OR 1 cup frozen whipped topping (like Cool Whip Lite), thawed
  • 2 tablespoons finely chopped salted peanuts (Optional Garnish)
  • 2 tablespoons light chocolate syrup (Optional Drizzle)

Instructions:

  1. Prepare the Crust: Combine crushed crackers and sweetener in a medium bowl. Pour in the melted butter and mix until uniformly damp. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Chill the crust in the refrigerator for at least 30 minutes.
  2. If using gelatin, bloom it according to package directions using a tablespoon of the almond milk, then gently warm until dissolved. Set aside to cool slightly.
  3. Make the Filling: In a large bowl, beat the softened cream cheese, peanut butter, sweetener, and vanilla until smooth and lump-free.
  4. Slowly mix in the remaining almond milk and the optional dissolved gelatin until just combined.
  5. In a separate, clean bowl, whip the heavy cream (or gently fold in the thawed whipped topping) until soft peaks form.
  6. Gently fold the whipped cream/topping mixture into the peanut butter base in two additions, being careful not to deflate the air.
  7. Assemble and Freeze: Pour the lightened filling evenly into the chilled crust. Smooth the top with a spatula. Cover the pie loosely with plastic wrap and transfer to the freezer.
  8. Freeze for a minimum of 6 hours, or until completely firm.
  9. Serve: Remove the pie from the freezer 10–15 minutes before serving to allow it to temper slightly for easier slicing. Garnish with chopped peanuts or chocolate syrup, slice, and enjoy this Skinny Frozen Peanut Butter Pie.
