Ingredients:

  • 1 ½ cups fine Digestive Biscuits or Graham Crackers crumbs (approx. 175g)
  • 4 Tbsp Unsalted Butter, melted and cooled (approx. 60g)
  • ¼ tsp Fine Sea Salt
  • 8 oz block Light Cream Cheese, softened (approx. 225g)
  • 1 cup Plain Greek Yogurt (2% or 5%) (approx. 240g)
  • ½ cup Natural Creamy Peanut Butter (approx. 130g)
  • ½ cup Powdered Erythritol or Sugar Substitute (approx. 60g)
  • 1 tsp Vanilla Extract
  • 2 Tbsp Milk (low-fat or almond, only if needed)
  • 1 cup Low-Fat Whipped Topping or Cool Whip (for garnish)
  • 2 Tbsp Chopped Salted Peanuts (for garnish)
  • 1 Tbsp Peanut Butter Drizzle (melted with a splash of milk, for garnish)

Instructions:

  1. Crush: Process or crush the digestive biscuits/graham crackers into fine, uniform crumbs.
  2. Combine: Place the crumbs in a bowl. Pour in the melted butter and salt. Stir until all crumbs are evenly moistened and resemble wet sand.
  3. Press: Transfer the crumb mixture to the 9-inch pie dish. Press firmly and evenly across the bottom and up the sides. Place the crust in the freezer for 15 minutes while preparing the filling.
  4. Cream the Base: In a large bowl, use an electric mixer on medium speed to beat the softened light cream cheese until smooth and fluffy (about 1 minute). Scrape down the sides.
  5. Incorporate Yogurt: Add the Greek yogurt and vanilla extract. Beat until fully combined, smooth, and no lumps remain.
  6. Add Flavor: Add the natural peanut butter, powdered sweetener, and salt. Beat on low speed until just incorporated, then increase to medium until the mixture is completely homogeneous and creamy. If the mixture seems too stiff, add milk 1 tablespoon at a time.
  7. Fill: Spoon the peanut butter filling into the chilled pie crust. Use a spatula to smooth the top surface evenly.
  8. Set: Cover the pie loosely and transfer it to the refrigerator. Allow the pie to chill and set for a minimum of 4 hours. Overnight chilling is ideal for firm slices.
  9. Garnish: Just before serving, dollop or spread the light whipped topping over the entire surface of the pie. Drizzle with the melted peanut butter (if using) and sprinkle with chopped salted peanuts.
  10. Serve: Use a sharp knife dipped in hot water to cut clean slices and enjoy.
