Ingredients:
- 1 ½ cups (180g) graham cracker crumbs
- ½ cup (100g) granulated sugar
- ½ cup (115g) unsalted butter, melted
- 16 oz (450g) cream cheese, softened
- ¾ cup (150g) granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- ½ cup (120ml) sour cream
- ¼ cup (60ml) heavy cream
- 1 cup (about 200g) crushed Skittles
- Additional crushed Skittles or color-coordinated gel or whipped cream for decoration
Instructions:
- Combine graham cracker crumbs, sugar, and melted butter until well mixed. Press mixture into the bottom of the springform pan. Bake at 350°F (175°C) for 10 minutes. Remove from oven and cool.
- In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, mixing until combined. Add vanilla, then mix in eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in sour cream and heavy cream.
- Gently fold in crushed Skittles or layer different colors if desired.
- Pour filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 50-60 minutes or until the edges are set and the center slightly jiggles.
- Let cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Release from springform pan and top with additional crushed Skittles or whipped cream before slicing.
