Ingredients:

  • 1 ½ cups (180g) graham cracker crumbs
  • ½ cup (100g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • ¾ cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) heavy cream
  • 1 cup (about 200g) crushed Skittles
  • Additional crushed Skittles or color-coordinated gel or whipped cream for decoration

Instructions:

  1. Combine graham cracker crumbs, sugar, and melted butter until well mixed. Press mixture into the bottom of the springform pan. Bake at 350°F (175°C) for 10 minutes. Remove from oven and cool.
  2. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, mixing until combined. Add vanilla, then mix in eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in sour cream and heavy cream.
  3. Gently fold in crushed Skittles or layer different colors if desired.
  4. Pour filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 50-60 minutes or until the edges are set and the center slightly jiggles.
  5. Let cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
  6. Release from springform pan and top with additional crushed Skittles or whipped cream before slicing.
