Ingredients:
- 6 cups (1.4 liters) whole milk
- 1 cup (200g) heavy cream
- 8 ounces (225g) semi-sweet chocolate, chopped
- 4 ounces (115g) dark chocolate (70% cacao or higher), chopped
- ¼ cup (20g) unsweetened cocoa powder
- ½ cup (100g) granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon chili powder
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Instructions:
- In the slow cooker, whisk together milk, heavy cream, chopped semi-sweet chocolate, chopped dark chocolate, cocoa powder, sugar, cinnamon, chili powder, nutmeg, and salt. Ensure everything is well combined.
- Cover and cook on low heat for 2-3 hours, or on high heat for 1-1.5 hours, stirring occasionally.
- After the initial cooking time, check that the chocolate is fully melted and the mixture is smooth. If needed, whisk vigorously to remove any small lumps. Adjust sweetness and spice to your preference, adding more sugar or chili powder, a pinch at a time.
- Stir in the vanilla extract.
- Ladle into mugs and garnish with whipped cream, marshmallows, chocolate shavings, cinnamon sticks, or a dusting of chili powder, if desired. Enjoy!
