Ingredients:

  • 1 ripe pineapple (about 3-4 lbs / 1.5-2 kg)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon ground cinnamon (2 g)
  • 1 tablespoon brown sugar (packed, 12 g)
  • 3 tablespoons honey (75 g)
  • 2 tablespoons freshly squeezed lime juice (30 ml)
  • Zest of 1 lime

Instructions:

  1. Peel and core the pineapple; slice into rings or wedges about ½ inch thick.
  2. In a mixing bowl, whisk together olive oil, ground cinnamon, and brown sugar.
  3. Coat the pineapple pieces in the marinade, ensuring even coverage. Let sit for 10-15 minutes.
  4. Preheat the grill to medium-high heat (about 400°F / 200°C).
  5. Place pineapple on the grill; cook for 3-4 minutes per side or until grill marks appear and caramelization happens.
  6. In another bowl, mix honey, lime juice, and lime zest until well combined.
  7. Plate the grilled pineapple and drizzle with honey-lime mixture. Serve warm.
