Ingredients:
- 1 ripe pineapple (about 3-4 lbs / 1.5-2 kg)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon ground cinnamon (2 g)
- 1 tablespoon brown sugar (packed, 12 g)
- 3 tablespoons honey (75 g)
- 2 tablespoons freshly squeezed lime juice (30 ml)
- Zest of 1 lime
Instructions:
- Peel and core the pineapple; slice into rings or wedges about ½ inch thick.
- In a mixing bowl, whisk together olive oil, ground cinnamon, and brown sugar.
- Coat the pineapple pieces in the marinade, ensuring even coverage. Let sit for 10-15 minutes.
- Preheat the grill to medium-high heat (about 400°F / 200°C).
- Place pineapple on the grill; cook for 3-4 minutes per side or until grill marks appear and caramelization happens.
- In another bowl, mix honey, lime juice, and lime zest until well combined.
- Plate the grilled pineapple and drizzle with honey-lime mixture. Serve warm.
