Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- 1 cup (2 sticks/226g) unsalted butter
- 1 cup (200g) granulated sugar
- ¾ cup (60g) unsweetened cocoa powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup (65g) all-purpose flour
- 2 cups (approx. 200g) mini marshmallows
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- Combine graham cracker crumbs, melted butter, and sugar in a medium bowl. Press firmly into the bottom of the prepared pan.
- Bake for 8 minutes to set the crust.
- In a large saucepan, melt butter over medium heat. Remove from heat and whisk in sugar, cocoa powder, salt, and vanilla.
- Whisk in eggs one at a time, then gently fold in the flour until just combined. Do not overmix.
- Pour the brownie batter over the pre-baked graham cracker crust. Spread evenly.
- Sprinkle mini marshmallows evenly over the brownie batter.
- Bake for 25-30 minutes, or until a toothpick inserted into the brownie portion comes out with moist crumbs. The marshmallows should be lightly golden brown.
- Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars. Enjoy your smores brownie bars!
