Ingredients:
- 12 cups popped popcorn
- 1/2 cup (115g) unsalted butter
- 1 cup (200g) packed light brown sugar
- 1/2 tsp (3g) baking soda
- 1 tsp (5ml) pure vanilla extract
- 1/2 tsp (3g) kosher salt
- 4 full-size (approx. 200g) Snickers bars, chopped
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Pop the corn and remove any unpopped kernels. Spread the 12 cups of popped popcorn evenly across a parchment lined baking sheet. Note: Removing kernels prevents dental disasters!
- In a large pot over medium heat, melt the unsalted butter.
- Stir in the brown sugar and salt, simmering for 3–5 minutes until the mixture is bubbling and has reached a deep mahogany color.
- Remove the pot from heat and quickly whisk in the vanilla extract and baking soda until the mixture foams.
- Immediately pour the foaming caramel over the popcorn and gently fold with a spatula until every piece is coated.
- Sprinkle the chopped Snickers chunks over the warm popcorn and press them lightly into the mixture.
- Place the baking sheet in a 250°F (120°C) oven for 10–15 minutes until the caramel is set and smells toasted.
- Melt the semi sweet chocolate chips in a microwave safe bowl in 30 second intervals, stirring in between until velvety.
- Drizzle the melted chocolate in thin lines across the cooled popcorn.
- Allow the tray to set for 2 hours before breaking into pieces and serving.
