Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (120g) sour cream
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 1/4 cup (60ml) milk
- 2 cups (300g) fresh peaches, peeled and diced into 1/4-inch pieces
- 1 tbsp (8g) flour
Instructions:
- Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- Place diced peaches in a small bowl and toss with 1 tablespoon of flour to prevent the fruit from sinking.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until no clumps remain.
- In a medium bowl, whisk together the sour cream, vegetable oil, eggs, vanilla extract, and milk until smooth.
- Pour the wet ingredients into the dry ingredients bowl. Using a rubber spatula, fold gently until barely incorporated to avoid over-developing the gluten.
- Gently fold the flour-coated diced peaches into the batter.
- Divide the batter evenly among the 12 muffin liners and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
