Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated cane sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) fine sea salt
- 1/2 cup (120g) low-fat sour cream
- 1/2 cup (120ml) unsweetened applesauce
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (225g) fresh peaches, peeled and diced
Instructions:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with non-stick spray.
- Toss the diced peaches in 1 tablespoon of the measured flour until lightly coated to prevent sinking.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until no lumps remain.
- In a medium bowl, whisk together the sour cream, applesauce, egg, and vanilla until smooth and pale.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula until flour streaks disappear; do not overmix.
- Gently fold in the floured peaches.
- Divide batter evenly among the 12 muffin cups and bake for 25 minutes or until a toothpick comes out clean.
