Ingredients:
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (10g) ground cinnamon
- 1 cup (200g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 3 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (240g) full-fat sour cream
- 2 cups (280g) grated zucchini, squeezed lightly
- 8 oz (225g) cream cheese, softened
- 1/4 cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 325°F (165°C) and grease a 10-12 cup Bundt pan with butter or baking spray, then dust with flour.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until no clumps remain.
- In a large bowl, beat the softened butter and sugar together on medium-high until pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Mix in the sour cream until the batter is smooth and velvety.
- Gradually fold in the dry flour mixture using a spatula until white streaks disappear.
- Gently fold in the grated zucchini until evenly distributed.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 60-70 minutes until a wooden skewer inserted into the center comes out clean.
- To make frosting, beat softened cream cheese and butter together, then mix in powdered sugar and vanilla extract until smooth.
