Ingredients:

  • 300g (11 oz) Vanilla wafer cookies
  • 60g (1/4 cup) Unsalted butter, melted (8 Tbsp)
  • 4 large ripe bananas, sliced
  • 710 ml (3 cups) whole milk, cold
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 2 tablespoons Bourbon (optional)
  • 113g (1/2 cup) Cream cheese, softened
  • 473 ml (2 cups) heavy cream, cold
  • 60g (1/4 cup) powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Crush the vanilla wafers, combine them with melted butter, and press into the bottom of your chosen dish. Chill while preparing the other layers.
  2. Slice the bananas into roughly 1/4-inch thick coins. Set aside.
  3. Whisk together the milk, pudding mix, vanilla extract, bourbon, and cream cheese until well combined and thickened.
  4. Beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to overwhip!
  5. Layer the banana pudding, alternating between the vanilla wafer layer, sliced bananas, and custard. Repeat until all ingredients are used, ending with a final layer of custard.
  6. Spread the whipped cream evenly over the final custard layer.
  7. Cover and refrigerate for at least 2 hours to allow the flavors to meld together.
  8. Slice and serve chilled. Garnish with extra vanilla wafers or banana slices, if desired.
