Ingredients:
- 300g (11 oz) Vanilla wafer cookies
- 60g (1/4 cup) Unsalted butter, melted (8 Tbsp)
- 4 large ripe bananas, sliced
- 710 ml (3 cups) whole milk, cold
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 teaspoon vanilla extract
- 2 tablespoons Bourbon (optional)
- 113g (1/2 cup) Cream cheese, softened
- 473 ml (2 cups) heavy cream, cold
- 60g (1/4 cup) powdered sugar
- 1/2 teaspoon vanilla extract
Instructions:
- Crush the vanilla wafers, combine them with melted butter, and press into the bottom of your chosen dish. Chill while preparing the other layers.
- Slice the bananas into roughly 1/4-inch thick coins. Set aside.
- Whisk together the milk, pudding mix, vanilla extract, bourbon, and cream cheese until well combined and thickened.
- Beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to overwhip!
- Layer the banana pudding, alternating between the vanilla wafer layer, sliced bananas, and custard. Repeat until all ingredients are used, ending with a final layer of custard.
- Spread the whipped cream evenly over the final custard layer.
- Cover and refrigerate for at least 2 hours to allow the flavors to meld together.
- Slice and serve chilled. Garnish with extra vanilla wafers or banana slices, if desired.
