Ingredients:

  • 6 medium apples, such as Honeycrisp, Gala, or Fuji (about 1.4 kg / 3 lbs), peeled, cored, and sliced ¼-inch thick
  • 4 tablespoons (57 g / 2 oz) unsalted butter
  • 1/4 cup (50 g / 1.75 oz) packed light brown sugar
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/4 teaspoon (1.25 ml) ground nutmeg
  • 1/4 cup (60 ml / 2 fl oz) water
  • 1 tablespoon (15 ml / 0.5 fl oz) lemon juice (optional, but brightens the flavor)

Instructions:

  1. Peel, core, and slice the apples into ¼-inch thick slices. Toss with lemon juice (if using) to prevent browning.
  2. In a large skillet over medium heat, melt the butter.
  3. Stir in the brown sugar, cinnamon, and nutmeg until combined and fragrant.
  4. Add the apple slices to the skillet in a single layer, if possible. Sauté, stirring occasionally, until the apples begin to soften.
  5. Pour in the water. Reduce the heat to low, cover the skillet, and simmer until the apples are tender and the sauce has thickened, about 10-15 minutes. Check occasionally, and add a splash more water if the pan looks dry.
  6. Serve warm.
