Ingredients:
- 1 Tbsp Olive Oil
- 1/2 medium Yellow Onion, finely diced
- 12 oz Impossible Ground (or similar plant-based mince)
- 3 Tbsp Quality Taco Seasoning
- 1/4 cup Water or Vegetable Stock
- Salt and Black Pepper, To taste
- 3 Large Eggs (room temperature)
- 1 cup Whole Milk (full-fat preferred)
- 3/4 cup Self-Rising Flour (or Bisquick)
- 1 cup Shredded Cheddar Cheese (divided)
- 1/2 cup Shredded Monterey Jack or Mexican Blend Cheese
- 1/4 cup Sliced Black Olives (Optional)
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease the 9-inch pie dish.
- Heat oil in a skillet over medium heat. Add diced onion and sauté for 3-5 minutes until softened and translucent.
- Add the Impossible Ground to the skillet. Break it up with a wooden spoon and cook for 6-8 minutes until browned and heated through.
- Stir in the taco seasoning and cook for 1 minute until fragrant. Pour in the water or stock, bring to a simmer, and cook until the liquid has almost fully evaporated. Remove from heat and season with salt and pepper.
- Spread the prepared taco filling evenly across the bottom of the greased pie dish.
- In a large mixing bowl, whisk the eggs and milk together until well combined.
- Gently whisk in the self-rising flour until just combined—be careful not to over-mix. Stir in the first 1/2 cup of shredded cheddar.
- Pour the liquid custard mixture slowly and evenly over the taco filling in the pie dish.
- Sprinkle the remaining 1 cup of cheese (Cheddar and Monterey Jack blend) and the optional black olives over the top.
- Place the pie dish into the preheated oven. Bake for 35–40 minutes.
- Check Doneness: The pie is done when the edges are set, the centre is firm, and the top is golden brown. A thin knife inserted near the centre should come out mostly clean.
- Crucially, remove the pie from the oven and let it rest on a cooling rack for at least 10 minutes before slicing. This allows the internal structure to set properly.
- Slice into wedges and serve immediately with your favourite toppings, such as sour cream, salsa, or guacamole.
