Ingredients:

  • 4 Tbsp All-Purpose Flour
  • 2 ½ Tbsp Granulated Sugar
  • ¼ tsp Baking Powder
  • Pinch Fine Sea Salt
  • 3 Tbsp Whole Milk (or alternative)
  • 1 Tbsp Neutral Oil (such as vegetable or sunflower)
  • ½ tsp Pure Vanilla Extract

Instructions:

  1. Combine the flour, sugar, baking powder, and salt directly into the serving mug.
  2. Use a fork to thoroughly whisk the dry ingredients together, ensuring the baking powder is evenly distributed for a good rise.
  3. Pour the milk, oil, and vanilla extract into the mug with the dry mixture.
  4. Use the fork to mix the ingredients together. Start slowly and scrape the bottom corners to ensure no dry pockets of flour remain.
  5. Mix only until just combined (around 10 to 15 seconds). Avoid over-mixing to prevent a rubbery texture. Wipe down the sides of the mug if necessary.
  6. Place the mug in the centre of the microwave. Cook on high power (800W–1000W) for 60 to 75 seconds.
  7. Check doneness: The cake should puff up significantly and appear dry on the surface. If the top still looks wet or glossy, return it to the microwave for 5–10 second increments.
  8. Allow the mug cake to rest in the mug for 1 minute after cooking. Add your favorite toppings (like ice cream or caramel) and enjoy directly from the mug.
