Ingredients:
- 1 box (15.25 oz / 432g) spice cake mix
- 2 large eggs
- 1/2 cup (118ml) vegetable oil
- 1/4 cup (50g) granulated sugar
- 1 tsp (2.6g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, combine the spice cake mix, eggs, and vegetable oil.
- Mix using a spatula or mixer on medium speed until the batter is fully combined; the texture should be thick, slightly sticky, and uniform in color.
- In a shallow bowl, whisk together the granulated sugar and ground cinnamon.
- Using a cookie scoop, portion out the dough into 1.5-tablespoon balls.
- Drop each ball into the cinnamon-sugar mixture and roll until evenly coated, ensuring the ball remains spherical.
- Place the coated balls on the baking sheet, spacing them 2 inches apart.
- Bake for 9–11 minutes, removing them when the edges are set and barely golden, but the centers still look slightly soft.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
