Ingredients:

  • 1 box (15.25 oz / 432g) Spice Cake Mix
  • 3 large eggs
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 cup (240ml) whole milk
  • 1 tsp (2.6g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • 8 oz (225g) full-fat cream cheese, softened to room temperature
  • 1/2 cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 tsp (5ml) vanilla extract
  • 1 pinch (0.5g) salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 11x14 inch or 9x13 inch rimmed baking sheet and line the bottom with parchment paper.
  2. In a large bowl, whisk together the melted butter, eggs, milk, and vanilla extract until combined.
  3. Add the spice cake mix and extra cinnamon to the wet ingredients. Beat on medium speed for only 2 minutes until the batter is smooth.
  4. Spread the batter evenly into the prepared pan using a spatula.
  5. Bake on the center rack for 25-30 minutes, or until the edges slightly pull away from the pan and the top springs back when touched.
  6. Remove from oven and let the cake cool completely in the pan.
  7. Beat the softened cream cheese and butter together until pale and fluffy. Gradually add powdered sugar, vanilla extract, and salt, beating until smooth.
  8. Spread the frosting evenly over the completely cooled cake using an offset spatula.
