Ingredients:
- 1 box (15.25 oz / 432g) Spice Cake Mix
- 3 large eggs
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 1 cup (240ml) whole milk
- 1 tsp (2.6g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened to room temperature
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1 pinch (0.5g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 11x14 inch or 9x13 inch rimmed baking sheet and line the bottom with parchment paper.
- In a large bowl, whisk together the melted butter, eggs, milk, and vanilla extract until combined.
- Add the spice cake mix and extra cinnamon to the wet ingredients. Beat on medium speed for only 2 minutes until the batter is smooth.
- Spread the batter evenly into the prepared pan using a spatula.
- Bake on the center rack for 25-30 minutes, or until the edges slightly pull away from the pan and the top springs back when touched.
- Remove from oven and let the cake cool completely in the pan.
- Beat the softened cream cheese and butter together until pale and fluffy. Gradually add powdered sugar, vanilla extract, and salt, beating until smooth.
- Spread the frosting evenly over the completely cooled cake using an offset spatula.
