Ingredients:

  • 1 cup Granulated Sugar
  • 1 cup Water
  • 1/2 cup Fresh Ginger, sliced (unpeeled)
  • 3 whole Cinnamon Sticks
  • 4 pods Star Anise
  • 4 cups 100% Cranberry Juice (Unsweetened)
  • 4 cups High-Quality Apple Cider (Cloudy/Natural)
  • 1 cup Fresh Orange Juice
  • 4 cups Ginger Ale or Sparkling Water (Chilled)
  • Ice Ring or Cubes (As needed)
  • 1/2 cup Fresh Cranberries (for garnish)
  • 1 large orange, sliced (for garnish)
  • 6 to 8 sprigs Rosemary or Thyme (for garnish)

Instructions:

  1. Prepare the Spiced Simple Syrup: In a large saucepan, combine the sugar, water, sliced ginger, cinnamon sticks, and star anise.
  2. Simmer and Dissolve: Bring the mixture to a gentle boil over medium heat, stirring just until the sugar is fully dissolved.
  3. Steep: Reduce the heat to low and simmer for 5 minutes. Remove from heat, cover the pan, and allow the mixture to steep for 30–45 minutes, allowing the spices to fully infuse.
  4. Strain and Chill: Strain the syrup through a fine-mesh sieve (discarding the solids) into a clean jar. Chill thoroughly in the refrigerator for at least 1 hour.
  5. Prepare the Punch Base: In a large jug or container, combine the chilled cranberry juice, apple cider, and fresh orange juice.
  6. Sweeten and Infuse: Pour 3/4 cup (180 ml) of the chilled Spiced Simple Syrup into the juice base. Stir well. Taste and add remaining syrup 1 tablespoon at a time if a sweeter punch is desired.
  7. Chill (The Matrimony Period): Cover the punch base and refrigerate for a minimum of 2 hours. This is crucial for the flavors to harmonize.
  8. Assemble the Bowl: Place your chilled punch bowl or dispenser onto your serving station. Add the large ice ring or a generous amount of standard ice cubes.
  9. Add the Base: Pour the fully chilled punch base into the bowl.
  10. Add the Sparkle (Just Before Serving): Gently pour in the chilled ginger ale or sparkling water. Stir very briefly and gently to combine without losing the fizz.
  11. Garnish: Float the fresh cranberries, orange slices, and rosemary/thyme sprigs on the surface for a beautiful, aromatic display. Serve immediately with a ladle and small punch cups.
