Ingredients:

  • 1 cup (240 ml) Water
  • 1 cup (200 g) Granulated Sugar
  • 1/2 cup (120 g) Pumpkin Puree (not pumpkin pie filling!)
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Vanilla Extract (good quality!)

Instructions:

  1. In a medium saucepan, combine water and granulated sugar.
  2. Place saucepan over medium heat and bring to a gentle simmer, stirring constantly until the sugar is fully dissolved.
  3. Whisk in the pumpkin puree and pumpkin pie spice until well combined.
  4. Reduce heat to low and simmer for 10-15 minutes, or until the syrup has thickened slightly, stirring occasionally. Watch it closely to avoid burning.
  5. Take the saucepan off the heat and stir in the vanilla extract.
  6. Allow the syrup to cool completely before transferring it to an airtight jar or bottle. Store in the refrigerator.
