Ingredients:
- 1 cup (240 ml) Water
- 1 cup (200 g) Granulated Sugar
- 1/2 cup (120 g) Pumpkin Puree (not pumpkin pie filling!)
- 1 teaspoon Pumpkin Pie Spice
- 1/2 teaspoon Vanilla Extract (good quality!)
Instructions:
- In a medium saucepan, combine water and granulated sugar.
- Place saucepan over medium heat and bring to a gentle simmer, stirring constantly until the sugar is fully dissolved.
- Whisk in the pumpkin puree and pumpkin pie spice until well combined.
- Reduce heat to low and simmer for 10-15 minutes, or until the syrup has thickened slightly, stirring occasionally. Watch it closely to avoid burning.
- Take the saucepan off the heat and stir in the vanilla extract.
- Allow the syrup to cool completely before transferring it to an airtight jar or bottle. Store in the refrigerator.
