Ingredients:
- 1 (10 ounce/283g) package frozen chopped spinach, thawed and squeezed dry
- 1 cup (240ml) mayonnaise
- 1 cup (240ml) sour cream
- 1 (8 ounce/227g) package cream cheese, softened
- 1 (1 ounce/28g) package dry vegetable soup mix (such as Knorr)
- 1/2 cup (60g) finely chopped water chestnuts, drained
- 1/4 cup (15g) finely chopped green onions
- 2 tablespoons (30ml) lemon juice
- 1/4 teaspoon black pepper
- Salt to taste
Instructions:
- Thaw frozen spinach. Squeeze out every last drop of moisture using a fine-mesh sieve or cheesecloth.
- In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Beat until smooth and creamy.
- Stir in the dry vegetable soup mix, chopped water chestnuts, and green onions. Mix well.
- Gently fold in the squeezed spinach. Ensure it's evenly distributed throughout the mixture.
- Add lemon juice and black pepper. Taste and season with salt as needed.
- Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold with your favorite dippers.
