Ingredients:

  • 1 (10 ounce/283g) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup (240ml) mayonnaise
  • 1 cup (240ml) sour cream
  • 1 (8 ounce/227g) package cream cheese, softened
  • 1 (1 ounce/28g) package dry vegetable soup mix (such as Knorr)
  • 1/2 cup (60g) finely chopped water chestnuts, drained
  • 1/4 cup (15g) finely chopped green onions
  • 2 tablespoons (30ml) lemon juice
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions:

  1. Thaw frozen spinach. Squeeze out every last drop of moisture using a fine-mesh sieve or cheesecloth.
  2. In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Beat until smooth and creamy.
  3. Stir in the dry vegetable soup mix, chopped water chestnuts, and green onions. Mix well.
  4. Gently fold in the squeezed spinach. Ensure it's evenly distributed throughout the mixture.
  5. Add lemon juice and black pepper. Taste and season with salt as needed.
  6. Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold with your favorite dippers.
