Ingredients:

  • 2 cups (240g) fresh strawberries, hulled and halved or quartered
  • 1 cup (150g) fresh blueberries
  • 1 cup (170g) fresh raspberries
  • 2 kiwi fruits, peeled and diced
  • 1 mango, peeled and diced
  • 1 ripe pineapple, cored and diced (about 2 cups/300g)
  • 1 cup (approx. 10 segments) mandarin oranges, peeled and segmented (canned are fine, drained well)
  • Optional: ½ cup (50g) shredded coconut (unsweetened) for garnish
  • 3 tablespoons (45ml) freshly squeezed lime juice (about 2-3 limes)
  • 2 tablespoons (30ml) honey (local honey if possible!)
  • 1 teaspoon lime zest
  • Pinch of sea salt
  • Optional: ½ teaspoon fresh mint, finely chopped

Instructions:

  1. Wash all fruit thoroughly. Hull and halve/quarter strawberries. Peel and dice kiwi, mango, and pineapple. Peel and segment mandarin oranges (or drain canned ones well).
  2. Place all prepared fruit in the large mixing bowl. Gently toss to combine.
  3. In the small bowl, whisk together lime juice, honey, lime zest, and salt until well combined. Stir in mint, if using.
  4. Pour the honey-lime drizzle over the fruit salad. Gently toss to coat. Be careful not to overmix and bruise the fruit.
  5. For best flavor, cover and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  6. Just before serving, garnish with shredded coconut (if using). Serve chilled.
