Ingredients:
- 2 large eggs (100g)
- 1 tablespoon milk or cream (15ml)
- Pinch of salt and black pepper
- 1 teaspoon olive oil (5ml)
- 1 Ciabatta Roll or similar (approx. 85g)
- 2 tablespoons prepared pesto (approx. 30g)
- 2 slices fresh mozzarella cheese (approx. 50g)
- Optional: Red pepper flakes for a touch of heat
Instructions:
- Whisk together eggs, milk/cream, salt, and pepper in a small bowl.
- Heat olive oil in the frying pan over medium heat. Pour in the egg mixture and cook until set, flipping once. Aim for a round shape similar to the roll's diameter.
- If desired, lightly toast the cut sides of the ciabatta roll.
- Spread pesto on both cut sides of the roll.
- Place one slice of mozzarella on the bottom half of the roll, then top with the egg patty, followed by the other slice of mozzarella.
- Close the sandwich and serve immediately. Optionally, microwave for 10-15 seconds to melt the mozzarella a bit more if you like it extra gooey.
