Ingredients:

  • 2 large eggs (100g)
  • 1 tablespoon milk or cream (15ml)
  • Pinch of salt and black pepper
  • 1 teaspoon olive oil (5ml)
  • 1 Ciabatta Roll or similar (approx. 85g)
  • 2 tablespoons prepared pesto (approx. 30g)
  • 2 slices fresh mozzarella cheese (approx. 50g)
  • Optional: Red pepper flakes for a touch of heat

Instructions:

  1. Whisk together eggs, milk/cream, salt, and pepper in a small bowl.
  2. Heat olive oil in the frying pan over medium heat. Pour in the egg mixture and cook until set, flipping once. Aim for a round shape similar to the roll's diameter.
  3. If desired, lightly toast the cut sides of the ciabatta roll.
  4. Spread pesto on both cut sides of the roll.
  5. Place one slice of mozzarella on the bottom half of the roll, then top with the egg patty, followed by the other slice of mozzarella.
  6. Close the sandwich and serve immediately. Optionally, microwave for 10-15 seconds to melt the mozzarella a bit more if you like it extra gooey.
