Ingredients:

  • 1/2 cup (45g) old-fashioned rolled oats
  • 1 tablespoon (12g) black or white chia seeds
  • 3/4 cup (180ml) unsweetened almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 1 cup (150g) fresh strawberries, hulled and divided
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon honey
  • 1/4 teaspoon lemon zest

Instructions:

  1. Place 1/2 cup of the strawberries in a small mixing bowl and mash with a fork until chunky and juicy.
  2. Stir the vanilla extract, lemon zest, and honey into the mashed strawberries to create the fruit base.
  3. In a 16 oz mason jar, combine the rolled oats and chia seeds.
  4. Pour in the almond milk and Greek yogurt, then add the mashed strawberry mixture.
  5. Stir vigorously until well combined. Top with the remaining sliced strawberries.
  6. Seal the jar and refrigerate for at least 6 hours or overnight to allow the oats and chia seeds to fully hydrate.
