Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 1 tablespoon (12g) black or white chia seeds
- 3/4 cup (180ml) unsweetened almond milk
- 1/4 cup (60g) plain Greek yogurt
- 1 cup (150g) fresh strawberries, hulled and divided
- 1/2 teaspoon pure vanilla extract
- 1 teaspoon honey
- 1/4 teaspoon lemon zest
Instructions:
- Place 1/2 cup of the strawberries in a small mixing bowl and mash with a fork until chunky and juicy.
- Stir the vanilla extract, lemon zest, and honey into the mashed strawberries to create the fruit base.
- In a 16 oz mason jar, combine the rolled oats and chia seeds.
- Pour in the almond milk and Greek yogurt, then add the mashed strawberry mixture.
- Stir vigorously until well combined. Top with the remaining sliced strawberries.
- Seal the jar and refrigerate for at least 6 hours or overnight to allow the oats and chia seeds to fully hydrate.
